A typical plate everybody knows and eats in Colima is sopitos.
Sopitos are well known because of their
amazing taste. This plate is what people usually
ask for in cenadurias (a restaurant open only in the evening and serves light meals).
There are two way people eat this dish, the best known one is the normal sopitos, the
other is called the sope gordo.
Sopitos are made with tortilla which can be served crispy or soft, with meat on top
with a delicious tomato sauce. It can
have also extra ingredients: striped lettuce, tomato and cheese.
The dish is served with five or six sopitos, and an order costs approximately two dollars.
The sope gordo is the other kind; the difference is that the tortilla is bigger and thicker and it served
with only one sope.
This typical preparations are served in Mexican restaurants and cenadurias in Villa de Alvarez,
Colima. One special place that I recommend is named Doña Julia, that makes delicious sopitos.
