One of  the most famous and preferred beverages in Colima is “Tepache” because it contains a special flavor and a small amount of alcohol.

 Tepache is “Agua Fresca” (a mixture of fruit and water) made with a mature pineapple that ferments. Tepache is sold in some restaurants but can also be found at the intersection of important avenues. You can buy one Tepache for the minimum price of 15 pesos ($1.50). The presentation of this special beverage is one big white glass with drawn fruits.

       Satisfy your curiosity, try a cool and delicious Tepache. You will enjoy this terrific beverage.

Recipe for Tepache

Ingredients:

  • 1 mature pineapple (around 3.3069 punds)
  • 12 cups (3 lt.) of water
  • 600 grs. of piloncillo or brown sugar
  • 1 small stick of cinnamon (about 3 inches)
  • 3 cloves

Procedure:

  1. Wash the pineapple completely, clear the stem and cut the rest in big pieces even with the rind.
  2.  Place the pieces of pineapple in a big container and add 8 cups (2 lt.) of water, piloncillo, the cinnamon and the cloves.
  3. Cover and let simmer for 48 hours.
  4. Strain the resulting liquid and add the other 4 cups (1 lt.) of water. (Or if you prefer, add 1 cup (1/2 lt.) of ale and let rest another 12 hours.)
  5. Strain and add 3 cups (3/4 lt.) of water.
  6. Serve cold with ice cubes.
